Quick Rava Vada

Another quick and easy snack option is Rava Vada. Its made of rava/ semolina/ sooji and curd. No soaking or grinding required and hence is super easy and quick. It is crispy from the outside and soft from inside. It can be a tasty and tempting breakfast or can be an evening snack option. So here is the recipe for you to try and enjoy! Ingredients :
(Makes About 15 vada's )
  • Rava/ Semolina/ Sooji - 1 Cup 
  • Curd/yoghurt- 1/2 cup 
  • Onion - 1/2 cup Chopped 
  • Chillies- 2 finely chopped 
  • Ginger- 1/2 tsp 
  • Coriander leaves- 1/4 cup 
  • Cumin seeds- 1/4 tsp
  • Baking soda- A pinch
  • Salt- to taste 
  • Oil- for deep frying 
Method: 
  1. Cut the onion, green chillies, Ginger, coriander leaves and keep aside
  2. Take a mixing bowl and add 1 cup of rava or semolina 
  3. Add salt as needed along with cumin seeds and baking soda
  4. Put the chopped onions, ginger, chillies, coriander and mix well 
  5. Add curd or yoghurt little by little and mix well till you get the right consistency 
  6. Make sure the batter isn't too runny or too hard 
  7. Leave the batter aside for 15-20 mins to rest
  8. Mix well again and keep kadai with oil for deep frying 
  9. When the oil is hot , wet you palm with little water and take lemon sized battered make it into flat round shape 
  10. Make a hole in the middle and drop them carefully into the hot oil
  11. Deep fry on medium heat until the Vadas turn nice golden brown colour on both sides
  12. Serve hot with coconut chutney or any chutney of your choice

Notes:
  • Make sure the batter is not runny or too hard 
  • Leaving the batter to rest for 15 mins makes it crispy from outside and soft from inside
  • Instead of curd you can use water but again make sure they aren't too runny or hard for perfect vada
