Ela Ada - Steamed Rice Pancakes with Jaggery & Coconut Filling

Ela Ada or Ada always evokes nostalgic memories. Ela ada or elayappam as some call it is a very healthy and popular recipe from Kerala usually served as an evening snack with tea. It is basically a steamed sweet delicacy made with rice flour dough and a Jaggery- coconut filling. It is a heavenly yet healthy mixture, which has the sweetness of coconut and melted jaggery and sealed within a layer of steamed rice flour dough. Ela ada can be made using wheat and rice flour and the fillings can vary. Though coconut and jaggery remain the most popular filling, it can be replaced by jackfruit and jaggery too, called chakka varatti. I have also had simple coconut & sugar versions.  As mentioned before, some dishes just brings in lots of childhood memories and Ela ada is a personal fav. Oats Banana Pancake - 10 min recipe

Quick one blender recipe - Healthy Banana Oats Pancakes This amount of batter makes about 7-8 pancakes. Double the amount of you need more. If you don't consume eggs, just add 2 Tbsp of yoghurt or curd. I add dates, nuts powder bcoz my son doesn't eat otherwise 😕 so that's completely optional. You can add honey, brown sugar or white sugar to this. Again this is optional and can be completely avoided since we add bananas and there is enough sweetness from ripe banana's. Palappam batter (Kerala Lace Pancakes)

Palappam or vellaappam /lace appam's / Fermented rice pancakes/Kerala Appam's, call it by any name, its delicious. Palappam is a pancake native to Kerala cuisine and is prepared from fermented rice-coconut batter and makes for a delicious breakfast. Typically served alongside stew dishes, which can be either a complete vegetable stew, just simple Potato stew or a meat based like mutton or chicken stew. Growing up, these were the showstoppers of Christmas and Easter and special days. Also it was included in special menu for guests. Now we make them atleast once a month because we love these, especially our son. These appams are extremely easy to make. In the market, we do get ready made appam powder, and though its extremely easy to make and no planning needed, I would still like to go the traditional way because it does taste better than the ready made ones.
