Brinjal Gothsu (Curry with Brinjal)

Quick Spaghetti Bolognese

So I decided to start cooking finally here after few weeks of "getting settled" in a new country and new life. Both my boys didn't want a normal daily food but wanted something different. And I wanted something which would be quick and "one pot" meal.  So Finally decided and made Spaghetti Bolognese. Its a wonderful dish with limited amount of work and just one pot deliciousness. Not only this spaghetti with bolognese delicious but its easy and quick to make as well. This simple  version  of Italian classic will be enjoyed by all .  So here is the recipe. Ingredients:  2 tablespoons olive oil  1 Large onion, finely chopped  1 pound or about 400gm minced chicken/meat of your choice 1-2 tablespoons dried oregano  1 can of crushed or pureed tomatoes  3 cloves garlic, finely chopped  2 tablespoons tomato paste/ sauce  1 good sized handful fresh  parsley , chopped  Salt and pepper, to taste  1/2 ...

Bangkok Diaries

So here I am back again after a long long time, this time the reason being not lazy but actually being tied up with lots of new responsibilities and work. Well we have been transferred to Bangkok, Thailand and it definitely has a been a roller coaster ride specially for me. Lots of new things to learn, understand in a new scenario and culture, things to wrap up all the unfinished business back home, it definitely was long 3 months. This isn't a food post but something which is very important in making that food ;) Well to start with Bangkok is an easy city to live in if you are from the busy metropolitan cities back home. So that way it wasn't much of a struggle. But yes culture, way of doing things, food, are different. But one can survive. When I arrived first I was super happy about the fact that so much food is available and for cheap. Quickie- Banana Dosa

Since my lil fellow has started PG, he has this constant hunger pangs and demands too. You can't just fix him anything like before 😟 And thats when I started searching for snacks which can be quick and tasty too. And that's how I stumbled upon Banana Dosa. Wow banana and dosa, both individually are my kiddo's fav and combined one would be a super hit. I also did make a variation and tried banana idli (which I feel is easier than dosa, since you don't have to wait and make them) So when the demand is high, this is the quickie which can come to your rescue.  Ingredients:  Banana (I used Robusta) : 2-3 Dosa/Idli Batter Sugar or Jaggery (melted) : 2 Tbsp Raisins: Handful (Optional) Oil or Ghee  : To grease the pan Method:  Mash the banana nicely with a fork.add in the sugar or the jaggery syrup and mix well. Ultra- Moist Cake

It's been a while since I have blogged and I definitely missed it. So now that I have finally got time to start over once again, I thought to myself, why not start with something sweet and also something which is comfortable. Since my lil champ has started his play group now, every now and then there is demand for cake. And this is one recipe I love not only because of its simplicity and ease, but also because it is super delicious. It is ultra moist, super soft, not overly sweet but yet super chocolatey. It's everything a cake should be. I found this on Maria's Menu   and the first time when I tried it, I wasn't sure about it, given the simplicity of the recipe and simple ingredients. But I was super happy to have a cake true to its name; Ultra Moist chocolate cake it is!! Chicken Badami

Ingredients: Chicken pieces-750 to 800 gm 10 red chillies Cinnamon-1 piece Cardamom-2 Clove-4 ¼ cup Almonds/Badam or ½ cup cashew nuts soaked in water Curd-1/2 cup 3 tomatoes chopped into small pieces 2 large Onions sliced Garlic-3 pods Turmeric powder- a pinch Oil-3 Tbsp Salt to taste Coriander Leaves for garnish Method: First soak the almonds in warm water for about 15 mins. Marinate the chicken pieces in curd and turmeric for an hour. Meanwhile make a paste of chilli and garlic. Remove the skin of the almond and make it into a paste separately. Take oil in a pan and add sliced onions, chilli-garlic paste and stir well till it turns slightly brown. Powder the cardamom, clove, cinnamon and add the masala and mix well. Add tomatoes and cook with little water on low flame for 5-10 mins. Add marinated chicken, salt and enough water to cook the chicken. Finally mix the almond paste/cashew nut paste and mix well. Kerala style Beef Cutlet

Easter is almost here and as usual we all will be planning on what special to be made this year. Well, some awesome dishes on your way to brighten up your Easter day!!  First the classic cutlets which every christian house would make for any festivity. This is a must in our household before Easter or Christmas. And we always make it in bulk and freeze them so we can have this heavenly dish again & again. This freezes well up-to 2 months.
