Brinjal Gothsu (Curry with Brinjal)

Coconut Rice

This quick yet delicious rice recipe is always a hit for any party or even on a nice weekend special lunch/dinner. It got sweet yet not overpowering taste of coconut and is best accompanied with mutton curry, salad, papad and of course pickle. You can serve it with chicken curry also ( Recipe for chicken curry here ) Its super easy, quick and very very delicious.  So go ahead, make it and Enjoy !  Ingredients :  Basmati Rice- 2Cups  Cinnamon/ cloves/Cardamom or elaichi- 2-3 pieces each  Onions- 1 Large chopped  Green chillies- 2 or 3 slit  Ginger- Garlic Paste- 2 tsps Oil/ Ghee- 2 Tbsp Water- 3 cups  Salt- To taste  Coconut milk powder -3 to 4 Tbsp  Fried cashews or coriander leaves - Optional  Method:   Soak Basmati rice for 15 -20 mins In a heavy bottom pan add ghee and then the whole spices to it. Khao Phat - Thai Fried rice

Love love love Thai food even before we relocated here. Khao phat is Thai fried rice. Khao in Thai = RICE , and Phat = Fried . Its a quick and easy lunch or dinner option when you really lazy to cook. Ingredients : Cooked rice- 2 cups  Onion- roughly chopped  Garlic - 6 pods - crushed  Carrot- 1 small cut into big round chunks  Eggs- 3- whisked  Boneless chicken- 1 bowl  Oyster Sauce - 2 tsp or as per taste  Thin black soy sauce - 2 - 3tsp  Black soy sauce - 2-3 tsp  Green chillies - 3 nos  Oil  Spring onion- handful for garnish  Salt - Optional **   Method :  Take a big wok or kadai.  Add oil and once heated add crushed garlic. Chicken curry (thick gravy)

A small family party few weeks back at home was organised and I decided to make the safest protein.... chicken. But every time I made chicken curry, the gravy would be either too watery or too dry. I wanted something which would be thick enough to have it with a nice jeera or coconut rice. You can check the coconut rice recipe ( click here for coconut rice recipe ). Finally I had my best cook-soul sister-friend, Rohini chechi mention it to me her recipe and tips to make the perfect chicken curry. Quick Egg Mayo sandwich

So evenings are always demanding and every family member needs some kind of snack along at tea time. And some days the hunger is more than a light snack. I personally hate to cook elaborate evening snack and hence as always my easy way out. This time its Egg may sandwich. so here it goes out for you all too for those hunger days. Its filling and yum. Ingredients : Makes about 6 sandwiches Time: 20 mins total Filling: Eggs - 4 boiled Onion- small chopped Mayo- about 2-3 tbs Pepper Powder- 1 tsp Salt- as per taste For Sandwich : Bread slices Butter Method : Boil 4 eggs and remove the shell. Mash them with a fork or spoon and keep aside.  Take a big mixing bowl and add the chopped onions, mashed eggs.  Add 3 tbs of mayo , salt and pepper. Mix them well. Idly/Dosa Batter Measurements

So this is something I knew since many years but I never implemented it. Well because I was lazy and used to think its a long process and its easier to get readymade from outside.  But necessity is what makes people work and I finally started making it.  And when I did, I am now thinking why didn't I ever make this before or put this in practice. I guess its just for the convenience. All these years I have bought readymade packed batter.  Finally I have mastered it by using my mom's recipe and hoping that these measurements would help someone like me. Lets see how its done. Quick Spaghetti Bolognese

So I decided to start cooking finally here after few weeks of "getting settled" in a new country and new life. Both my boys didn't want a normal daily food but wanted something different. And I wanted something which would be quick and "one pot" meal.  So Finally decided and made Spaghetti Bolognese. Its a wonderful dish with limited amount of work and just one pot deliciousness. Bangkok Diaries

So here I am back again after a long long time, this time the reason being not lazy but actually being tied up with lots of new responsibilities and work. Well we have been transferred to Bangkok, Thailand and it definitely has a been a roller coaster ride specially for me. Lots of new things to learn, understand in a new scenario and culture, things to wrap up all the unfinished business back home, it definitely was long 3 months. This isn't a food post but something which is very important in making that food ;) Well to start with Bangkok is an easy city to live in if you are from the busy metropolitan cities back home. So that way it wasn't much of a struggle. But yes culture, way of doing things, food, are different. But one can survive.
