Easy Homemade Fudgy Brownies

Well I don't remember ever having a special liking for brownies since I have always had the boxed version; until I had some homemade brownies made by my sister in law, Saritha. The best brownies I have had was then!! Thats when I started to crave for brownie and explored on making them at home.  Dry, crumbly and cakey brownies are not what I like. These Mini bread pizza's are perfect for those sudden hunger pangs and also for getting in the necessary Veggies in. Extremely easy to make and tasty as well. Palappam or vellaappam /lace appam's / Fermented rice pancakes/Kerala Appam's, call it by any name, its delicious. Palappam is a pancake native to Kerala cuisine and is prepared from fermented rice-coconut batter and makes for a delicious breakfast. Typically served alongside stew dishes, which can be either a complete vegetable stew, just simple Potato stew or a meat based like mutton or chicken stew. Growing up, these were the showstoppers of Christmas and Easter and special days. Also it was included in special menu for guests. Now about Babka : What is babka? Babka is a dense cake although it looks like a bread- its a sweet yeast dough, filled with cinnamon or chocolate in layers and baked. One can call Babka is a sweet dessert with Jewish roots. It is somewhere between bread and cake. Babka is essentially brioche dough with a filling (such as chocolate or jam) and braided into a pretty shape. How do we prepare Babka? It is prepared with a yeast-leavened dough that is rolled out and spread with a filling such as chocolate, cinnamon, fruit, Jam or cheese then rolled up and braided before baking.
