On a lazy day while watching Nigella's show, found interesting recipe and since then this has been a constant for our sweet cravings.
This recipe is something which I make when I am really low and chocolate makes everyone happy, right!!  It needs very simple and basic ingredients which we have in our kitchen. So if you are in a lazy-lazy mood but still wanna have a delicious, comfortable, warm dessert, try this one. Also this is something which doubles up as a breakfast and dessert as well.

Have been making this gooey, chocolatey , heavenly dessert since 12 years now and I fall in love with it every time. Updated step by step video

Ingredients:
  • 250 gm stale/old bread(white bread is better) **
  • 100gm(or more) dark chocolate chip - (optional)
  • 3 eggs (For eggless version check Notes below)
  • 40 gm or 1/2 cup light brown sugar or normal sugar coarsely powdered
  • 500 ml full fat milk
  • 2 Tbsp Dark rum (optional)
  • Butter for greasing
Method:
  1. Pre-heat oven to 170 degree Celsius.Grease a pie dish or any oven proof dish lightly with butter.
  2. Put in the  bread by just cutting it or tearing it into pieces.
  3. Put in chocolate chips all over the bread deep inside. Keep aside
  4. In another bowl whisk together milk, eggs and brown sugar , rum(if using)
  5. Pour this mixture into the pie dish and press down the bread so it can soak in all the liquid.
  6. Let it soak for about 20 min before baking.
  7. Put this straight into your pre-heated oven for 40 to 50 min.
  8. Check in between as different oven will have different time for baking.
  9. The pudding is ready when the custard has set and has a light gooey texture inside.
Notes:
  • I have tried this recipe with brown bread as well. But I must say that this recipe goes well with white bread. I also love using old croissants for this recipe
  • And also best is to use old bread which is at least 2 or 3 days old. It does make a lot of difference in the texture.
  • If its not stale or old enough you can keep it open in fridge or outside on a wire rack for few hours before using them.
  • Brown sugar gives it a different taste than normal white sugar. But if someone doesn't get it, normal sugar can be used.
  • If you don't have chocolate chips handy, you  can just use a normal chocolate bar and chop it into small small pieces and use. Chocolate chips are optional.
  • You can also ad raisins instead of chocolate chips. Anything you please.
  • If you do nt eat eggs,  do not worry, you can still make them. Just make these with custard powder instead. Make the custard with milk and sugar like you would normally do or as instructed on the packet. 2 to 3 tbsp for 500 ml should be ok. Boil all till its smooth and creamy and still a bit runny. Do not make it more thick. And pour this onto the bread.
  • The Original recipe demands for 1 tbsp rum to be mixed. I usually don't add but it does give it a nice flavour. Do add if you wish to.
  • You can also make these on a stove top. Just add some water in a steamer and keep these for steaming for atleast 50 mins or until the custard is completely set and cooked.

Easy Sambar (without tamarind)

Sambar is a must in most south Indian families and like others even I have grown up having dosa- sambhar and chutney's. A Sambar is a lentil based vegetable stew or curry cooked with dal/lentils along with some veggies and some tamarind pulp. There are coconut based sambar as well and each region has its own sambar variation. In my house, we all prefer quick meals, but yet tasty. My mother who was a working lady would make elaborate meals only during holidays or special occasions. Rest all the meals would be quick yet very very tasty. This is one such sambar which my mom has taught me and is super quick.  This doesn't use tamarind like in a traditional sambar and gets its tangy flavour from tomatoes. Its quick, one pot sambar recipe. Lets dive in and see how its done: Ingredients: Serves 3 1/2 to 1 cup Tur Dal/ Yellow Lentils 2-3 tomatoes chopped (depending on size) 1/2 cup Veggies each of your choice cubed Turmeric powder A pinch of Asafoetida/ Hing 1/2 tsp chilli powder Salt

Home-Made Nuts Powder

Home-Made Nuts powder is something which I have been making since Jeremy was a 9 month old. Initially to introduce nuts, I used to powder each nut separately (one day each) and mix with every food. As he grew older I realized he hates whole nuts especially Almonds and Pistachios. Cashews are still ok with him provided they are salted ones. But still he wasn't consuming much. Thats when I decided to continue making the essential and important nut powder. He hates the fact that nuts or chunky powder has been added and just rejects the whole meal even though its tasty and likes it. But this fine nut powder is a winner and I add it up in almost everything on a daily basis.  So this nut powder is perfect for fussy kid like mine or if you just wanna introduce nuts to your kids diet, this is a good solution. Its pretty simple and fuss free.   The powder is suitable for babies over 8 months, but before you feed this to your baby, make sure that baby has already tried the powdered version o
