Brinjal Gothsu (Curry with Brinjal)

Mango Sticky Rice/Khao-niao Ma- muang (Thai-Dessert)

Heavenly is the only way to describe the classic Thai dessert khaoniao mamuang. It's the most famous of all Thai Desserts and so delicious. A traditional Thai Dessert made with glutinous rice, fresh mango and coconut milk. Traditionally, the sticky rice is made in a pot on your stove by steaming the Glutinous Rice , and then adding sweet coconut milk over. Serve it with some fresh mango slices over the sticky rice and smother with the rest of the coconut sauce, and the result is pure heaven! If you like mangoes and/or sticky rice, you're going to love this exotic Thai dessert. Most stores now do have asian section with variety of asian things available throughout. But just in case you do not get sweet/sticky rice, you can make with any regular rice. Sweet Potato Balls - Khanom Kai Nok Krata (Thai Street snack)

These delicious, sweet, and chewy sweet potato balls are a staple street food snack in Thailand. I first had these in one of the night markets we visited where street vendors lined up selling different types of delicious Thai staples. This snack is locally known as Khanom Kai Nok Krata because they are small like quail eggs, ( Khanom = snack, kai nok krata = quail eggs ) and they are quite easy to make at home.  The outside is crisp and like a little donut, and the inside is soft and chewy.  This popular street food is also known as sweet potato balls amongst the foreigners. I would say, this tastes almost like a mini doughnut, they have that yummy chewiness and airiness we all love in doughnuts. But this doughnut would be the easy to make since there is no yeast, no kneading, no proofing. Pad-Thai (Phad-Thai)

Since I have moved to Bangkok I have never stopped loving this place specially for the kind of food they serve. Pad-Thai or Phad Thai is one such dish I want every time. Its extremely tasty and one of the best dishes I have tried in Thailand. It is a popular street food made of stir-fried flat rice noodles. The noodles are flavoured with tamarind paste, shrimp paste, chillies, fish sauce and lime. Usually it include eggs, tofu, prawns or chicken , chopped peanuts, bean sprouts and pickled radishes or cucumber to garnish. This recipe is not the authentic way of making Pad Thai as I usually do not have most ingredients required for making authentic one and also my husband doesn't prefer the flavour of fish sauce. Khao Phat - Thai Fried rice

Love love love Thai food even before we relocated here. Khao phat is Thai fried rice. Khao in Thai = RICE , and Phat = Fried . Its a quick and easy lunch or dinner option when you really lazy to cook. Ingredients : Cooked rice- 2 cups  Onion- roughly chopped  Garlic - 6 pods - crushed  Carrot- 1 small cut into big round chunks  Eggs- 3- whisked  Boneless chicken- 1 bowl  Oyster Sauce - 2 tsp or as per taste  Thin black soy sauce - 2 - 3tsp  Black soy sauce - 2-3 tsp  Green chillies - 3 nos  Oil  Spring onion- handful for garnish  Salt - Optional **   Method :  Take a big wok or kadai.  Add oil and once heated add crushed garlic.
