Brinjal Gothsu (Curry with Brinjal)

Mango Sticky Rice/Khao-niao Ma- muang (Thai-Dessert)

Heavenly is the only way to describe the classic Thai dessert khaoniao mamuang. It's the most famous of all Thai Desserts and so delicious. A traditional Thai Dessert made with glutinous rice, fresh mango and coconut milk. Traditionally, the sticky rice is made in a pot on your stove by steaming the Glutinous Rice , and then adding sweet coconut milk over. Serve it with some fresh mango slices over the sticky rice and smother with the rest of the coconut sauce, and the result is pure heaven! If you like mangoes and/or sticky rice, you're going to love this exotic Thai dessert. Most stores now do have asian section with variety of asian things available throughout. But just in case you do not get sweet/sticky rice, you can make with any regular rice. You could use regular white rice or brown rice to create a similar texture, but you won’t get the same level of stickiness as you would with the sweet rice. Mango Sheera

Mango Sheera/ Halwa/ Mango semolina pudding- Check Recipe Video Below  Ingredients:  1 cup mangoes finely chopped  1 cup Rava/semolina 1 cup ghee 2 cups milk  1 cup sugar  Raisins handful (optional)  Almonds n pistachios handful (optional)  Method:  🔸Boil the milk in a round bottom pan.  🔸While the milk is boiling take another pan/kadai & add Ghee/clarified butter.  🔸Add in the Rava/semolina to it & saute on medium heat for about 5-7 mins  🔸To this add in the chopped mangoes and mix well. Mash with the back of spatula if needed.  🔸Add in some dry fruits if using at this stage.  🔸After 5 mins, slowly add the boiled milk to it in batches & mix well. Keep stiring while adding the milk.  🔸After 5 mins add in the sugar & mix well again. Cover it with a lid & let it cook for 5 mins & done. 🔸Garnish with dry fruits & chopped mango slices (optional)

Mini Mango Pie😋

There are thousands of reason to hate summer but this fruit just melts my heart. Got very good tasty mangoes this season and though we love eating them just as it is, sometimes we like to create something special too out of it. I made  Mango Phirni   few days back and family loved it. So this time wanted to try something else. My original plan was to make apple pie since it been long (Around 2 years) I haven't made one neither had one from outside. Well, Apple pie turned into Mango Pies 😉.  I usually like to make my pies in my muffin pan instead of a pie dish. I have made Apple Pie, Savory pies & every time I find it much easier to roll out smaller discs. Also the most important reason is when you have a 5 year old home and everything has to be equally shared, this way is much much easier and each one gets his/her complete share. Mango Phirni- (Mango Pudding)

We love mangoes and have them every summer. And we love sweets too. So why not make something sweet out of mangoes. I have tried making mango sheera, Mango cheese cake (No bake), Mango custard, but this time I wanted to try something different. We love phirni,  and its Ramadan and we are missing the authentic phirni, so thought of making Mango phirni. It is a different variation to the popular Indian sweet Phirni. Phirni is a rice pudding or rice kheer made with full cream milk, and rice. I have added mangoes as the main ingredients to make this one. The creaminess of milk and the texture of mango chunks along with nuts makes this a super dessert. It tastes very similar to mango rice kheer with a pudding consistency hence we can call it as Phirni. The best part about this recipe is limited ingredients which we would have at home and its very easy to make. The only problem I find in this is the waiting 😥 for it to chill.
