Coriander Pulao | Kothamali Rice - One pot Meal

Any type of pulao or pilaf is one pot rice made with aromatic spices and herbs. In India, there are many types of pulao made and relished like vegetable pulao, matar (Peas) pulao, Kashmiri pulao, coconut pulao. Check other quick One pot meals here. Todays dish is quick and easy Coriander Pulao which can also be made with leftover rice as well as like a normal pulao. It goes well with onion or Boondi Raita. I usually add vegetables to this to make it wholesome meal, but you can also make it as a simple plain coriander pulao and it still will be tasty. Lets see how's this done. Serves : 4
Ingredients : (FOR MASALA PASTE:)
  • 1/2 Onion chopped
  • 1/2 inch ginger 
  • 4 garlic pods 
  • 4 cloves / lavang 
  • ½ tsp whole pepper 
  • 1 inch cinnamon 
  • 2 green chilli (split)
  • Handful coriander leaves 
Other Ingredients: 
  • 1 tbsp ghee or clarified butter / Oil 
  • 1 bay leaf / tej patta
  • 1 tsp cumin seeds /jeera 
  • 1/2 onion, sliced
  • 1 tsp ginger garlic paste
  • 1 tomato, finely chopped
  • 5-6 beans, chopped
  • 1/4 cup carrot- chopped (any veggie of your choice)
  • 2 tbsp peas / matar
  • 1 tsp salt or as per taste 
  • 2 cups rice soaked or 2 cups cooked rice
Method:
  1. First, wash 2 cups of rice well and soak it in water for about 20 mins. (See Notes for type of rice)
  2. Then take half onion, cloves, a tsp pepper,  cinnamon,  green chilli and handful coriander leaves, (Things listed under masala paste) and blend to smooth paste adding 2 tbsp of water or as required. Keep this aside. 
  3. In a large kadai, heat 1 tbsp ghee and roast 1 bay leaf and splutter some jeera (Cumin seeds)
  4. Add and saute' the sliced onion for about 2 -3 mins. 
  5. Along with this, add 1 tsp ginger-garlic paste.
  6. Add tomato and saute' till the tomatoes turn soft and mushy.
  7. To this add 5 sliced beans, carrot, few peas and saute' (Can use any veggie of your choice or avoid)
  8. Add in the prepared green masala paste along with 1 tsp of salt and mix well.
  9. Cover and cook for 5 -8 minutes, or till vegetables get par-cooked
  10. To this, add in the washed , soaked rice and saute for a min.
  11. Then add in water to cook. 
  12. Always double the amount of water, using the same cup you used to measure the rice.  In this case 4 cups of hot water. (ratio: 1: 2 ) See notes
  13. Close the lid and cook on medium flame till all the water is evaporated and rice is cooked well. 
  14. Fry some cashews in little ghee or oil & garnish the rice (This is totally optional) but definitely gives a good crunch
  15. Fluff the rice slowly with a fork and serve coriander rice / coriander pulav with Raita of your choice along with papad.

Notes: 
  • You can make this pulao with leftover cooked rice too. Just add the cooked rice, once veggies and green paste masala is completely cooked through and mix well. 
  • You can add any veggies of your choice. I usually use carrots, beans, Peas and sometimes Soyabean chunks as well in this recipe.
  • As mentioned earlier, veggies are totally optional and I sometimes avoid veggies, specially when I am running out of time.

Easy Sambar (without tamarind)

Sambar is a must in most south Indian families and like others even I have grown up having dosa- sambhar and chutney's. A Sambar is a lentil based vegetable stew or curry cooked with dal/lentils along with some veggies and some tamarind pulp. There are coconut based sambar as well and each region has its own sambar variation. In my house, we all prefer quick meals, but yet tasty. My mother who was a working lady would make elaborate meals only during holidays or special occasions. Rest all the meals would be quick yet very very tasty. This is one such sambar which my mom has taught me and is super quick.  This doesn't use tamarind like in a traditional sambar and gets its tangy flavour from tomatoes. Its quick, one pot sambar recipe. Home-Made Nuts Powder

Home-Made Nuts powder is something which I have been making since Jeremy was a 9 month old. Initially to introduce nuts, I used to powder each nut separately (one day each) and mix with every food. As he grew older I realized he hates whole nuts especially Almonds and Pistachios. Cashews are still ok with him provided they are salted ones. But still he wasn't consuming much. Thats when I decided to continue making the essential and important nut powder. He hates the fact that nuts or chunky powder has been added and just rejects the whole meal even though its tasty and likes it. But this fine nut powder is a winner and I add it up in almost everything on a daily basis.  So this nut powder is perfect for fussy kid like mine or if you just wanna introduce nuts to your kids diet, this is a good solution. Its pretty simple and fuss free.   The powder is suitable for babies over 8 months, but before you feed this to your baby, make sure that baby has already tried the powdered version o
