2-Min Microwave Fudgy Mug Chocolate Cake



This chocolate fudge treat is perfect for those sudden sweet tooth cravings in the night and can be ready under 10 mins. Right now we all are in a situation we never thought we would ever be. And with limited supplies at home and no food from outside I am sure we all are craving for something which would lift up our spirits a little more and be positive in this gloomy situation. This recipe was shared to me by my biggest support, my critic, my little sister Annu who tried this 2 min mug cake. She said its a must try and it hardly takes any effort.
Well, I did try and she was right. This is one of the easiest and quickest cake I have ever made. I had seen this recipe many times but never ever thought of making it. Thanks to quarantine life and my sister, tested it finally and yum. All you need is few simple ingredients which mostly all would already have at home and a simple coffee mug or a bowl. So here goes the recipe.

Ingredients :
  • All purpose flour or Maida- 1/4 cup 
  • Cocoa Powder, Unsweetened - 2 Tbsp 
  • White sugar- 1/4th cup Salt- 1/8th tsp 
  • Baking Soda- 1/8 tsp 
  • Vanila extract- 1/4th tsp (optional) 
  • Canola oil or any sunflower oil - 2 Tbsp 
  • Milk- 3 Tbsp 
  • Water- 1 Tbsp 
  • Nutella - 1 spoon (optional) 
  • Chocolate chips - 1/4th cup (optional)
  • More Nutella as a frost 
Method:
  1. Mix Flour/ Maida, Sugar, Cocoa powder, Baking Soda and Salt in a large microwave safe mug or a bowl and mix well. 
  2. Pour in the oil, milk, water and vanilla extract 
  3. Mix with a spoon until everything is well combined 
  4. Cook this in microwave for about 2 mins or until cake is done in the middle. 
  5. Serve plain  or add a dollop of Nutella as a frost or with vanilla ice cream 
Notes: 
  • Try and use a big mug/ cup which is microwave safe as sometimes the cake would rise up and overflow. 
  • You can make this in either a large mug (microwave safe) or a bowl
  • Also the mentioned quantity is for one serve. Double the quantity to serve more
  • You can make this in 2 separate mugs as well or combine and make in one big bowl like I did 
  • For a healthier version you can add 3 tbsp water and 1 tbsp milk 
  • Add chocolate chips and Nutella in this to make it more delicious. This is completely optional

Easy Sambar (without tamarind)

Sambar is a must in most south Indian families and like others even I have grown up having dosa- sambhar and chutney's. A Sambar is a lentil based vegetable stew or curry cooked with dal/lentils along with some veggies and some tamarind pulp. There are coconut based sambar as well and each region has its own sambar variation. In my house, we all prefer quick meals, but yet tasty. My mother who was a working lady would make elaborate meals only during holidays or special occasions. Rest all the meals would be quick yet very very tasty. This is one such sambar which my mom has taught me and is super quick.  This doesn't use tamarind like in a traditional sambar and gets its tangy flavour from tomatoes. Its quick, one pot sambar recipe. Lets dive in and see how its done: Ingredients: Serves 3 1/2 to 1 cup Tur Dal/ Yellow Lentils 2-3 tomatoes chopped (depending on size) 1/2 cup Veggies each of your choice cubed Turmeric powder A pinch of Asafoetida/ Hing 1/2 tsp chilli powder Salt

Home-Made Nuts Powder

Home-Made Nuts powder is something which I have been making since Jeremy was a 9 month old. Initially to introduce nuts, I used to powder each nut separately (one day each) and mix with every food. As he grew older I realized he hates whole nuts especially Almonds and Pistachios. Cashews are still ok with him provided they are salted ones. But still he wasn't consuming much. Thats when I decided to continue making the essential and important nut powder. He hates the fact that nuts or chunky powder has been added and just rejects the whole meal even though its tasty and likes it.
