No Bake Eggless Bread Pudding -Easter Special

Its said "Life is short, so make it sweet", and I love sweets, baking is my passion, my meditation, my stress buster. I believe sweet dishes are instant mood lifters and a must for any celebration or occasion. This recipe is yet another simple, easy, no mess pudding. This eggless caramel bread pudding is made with bread slices, milk and is steamed. No baking is involved and hence easy and quick. It can be made with any bread, white or whole wheat and also with bun. Its a perfect recipe to use leftover old bread slices. Lets see how its done. Step by step photos are given below for reference.

Ingredients: 
  • 4 to 6 slices of bread(white, wheat, brown)
  • 400 ml Milk 
  • 5 Tbsp sugar
  • 1 Tsp corn starch/Corn flour
  • 1/2 Tsp vanilla extract or essence
For Caramel: 
  • 2.5 Tbsp sugar 
  • 1 Tbsp water 
Method: 
  1. Chop up the bread slices into small cubes. It has to be small for easy mashing or you can alternatively cut and just pulse in the mixer for 1 min to get bread crumbs
  2. In a pan take 400 ml milk, add 5tbsp sugar to it and keep it on low flame. 
  3. Add 1 tsp corn starch and mix well
  4. Keep the pan on low flame and allow the sugar to dissolve. There is no need to boil the milk. 
  5. Once the sugar is dissolved and milk is hot, remove from flame
  6. Add the bread cubes or crumb and mix well 
  7. Mash and mix well and make sure all the bread crumb is completely mashed
  8. Add 1/2 tsp vanilla extract or essence, mix well and keep aside this mixture
  9. At this stage, make sure to have your pressure cooker and a pan which would go inside the pressure cooker- ready and in reach for use. 
  10. Take a pan and add 2.5 Tbsp of sugar and 1 Tbsp water to it on medium heat
  11. Keep mixing this with a spoon or spatula while the sugar is melting
  12. It will slowly form bubbles in the sugar solution, make sure to keep stirring
  13. Keep on stirring till the solution becomes dark brown and caramelized 
  14. Switch off and quickly add this caramelized sugar to the utensil you are going to keep in pressure cooker for steaming the pudding
  15. Spread it all over the pan, along the edges quickly before the caramel solidifies. 
  16. Add the Bread-Milk mixture onto this caramelized sugar base
  17. Cover it with a aluminum foil and make small holes on it using a tooth pick. You could also cover it with a normal lid
  18. Add water in pressure cooker (the water should be about 1-1.5 inch above the base of pudding pan)
  19. Keep a trivet or a small utensil inside the cooker. Your pudding dish needs to sit on that trivet. 
  20. Carefully with the help of tongs or a cloth keep the prepared pudding pan into the cooker onto the trivet and put on the lid
  21. Remove the weight or whistle from the cooker lid 
  22. Steam the pudding in the cooker for about 20 to 25 mins until set
  23. Once done, take it out carefully and flip it onto a plate to make sure the caramelised part comes on top. 
  24. Serve warm or chilled as per preference
Notes: 
  • You can use any kind of bread like white, whole wheat, brown, multigrain, baguettes or even buns. I have tried them with croissants too
  • Make sure the bread slices are chopped really small or just pulse it to make a crumb for easy mixing into the milk 
  • You can add more or cut down on sugar as per your taste preference  
  • You can also prepare a pudding pan and steam it in a Idly maker instead of pressure cooker 
  • Serve this at room temperature or refrigerate and serve chilled. 
  • Add caramel or chocolate sauce for added taste and yumminess.

Sambar is a must in most south Indian families and like others even I have grown up having dosa- sambhar and chutney's. A Sambar is a lentil based vegetable stew or curry cooked with dal/lentils along with some veggies and some tamarind pulp. Home-Made Nuts Powder

Home-Made Nuts powder is something which I have been making since Jeremy was a 9 month old. Initially to introduce nuts, I used to powder each nut separately (one day each) and mix with every food. As he grew older I realized he hates whole nuts especially Almonds and Pistachios. Cashews are still ok with him provided they are salted ones. But still he wasn't consuming much.
