Apple Kheer/ Payasam


Kheer or payasam is the most preferred dessert when it comes to special occasions in my house and I keep making different varieties of kheer. This time while browsing for kheer recipe, I found out this very unique kheer recipe and decided to try it for our anniversary. 
Apple Payasam is another version of the traditional milk based dessert. Its creamy and extremely tasty. My son who doesn't eat apple at all, was seen demanding more of this tasty kheer.

Its best to use full cream milk for this kheer as for any other kheer. This is what will give you a creamy and rich kheer. This was the first time I tried making a fruit based kheer and it turned out to be delicious. You can check out other Indian Desserts here.  Lets see how this is done. Step by step images are given below for reference. 

Ingredients :

  • 1 apple
  • 1 tsp Ghee or clarified butter
  • 3 cup milk
  • ¼ cup condensed milk / milkmaid (add more if you like)
  • ¼ tsp cardamom powder
  • 2 tbsp dry fruits, chopped (Optional)

Method:

  1. First peel the skin of the apple and grate it. 
  2. Transfer the grated apple to a pan and saute with 1 tsp ghee on medium flame.
  3. Cook the apple until entire water from the apple is evaporated and apple is cooked well. 
  4. Keep aside and cool completely. (Check Notes)
  5. In a large sauce pan or kadai, heat 3 cup milk
  6. Add 1/4 cup condensed milk/milkmaid to the milk and keep stirring on low flame
  7. Boil for 10 - 15 minutes or until the milk thickens
  8. Add ¼ tsp cardamom powder and mix well. 
  9. Allow the milk to cool completely. (Check notes)
  10. Now add cooked apple and mix well. 
  11. Make sure both apple and milk are in room temperature, or else there are chances of milk to curdle. 
  12. Cover and refrigerate for 30 minutes or until its chilled. 
  13. Serve apple kheer garnished with few chopped nuts. 
Notes: 

  • Make sure to add grated apples to saute' immediately as it will brown if kept for long
  • Do not add milk and grated apples when it is hot as the milk can get curdled.
  • Adjust the sweetness according to the sweetness of the apples or as per taste.
  • You can use sugar instead of condensed milk.
  • This kheer is best served chilled. But you can also serve it warm
  • I added cashews to it. You can garnish with almonds, pistachios too.

Easy Sambar (without tamarind)

Sambar is a must in most south Indian families and like others even I have grown up having dosa- sambhar and chutney's. A Sambar is a lentil based vegetable stew or curry cooked with dal/lentils along with some veggies and some tamarind pulp. There are coconut based sambar as well and each region has its own sambar variation. In my house, we all prefer quick meals, but yet tasty. Home-Made Nuts Powder

Home-Made Nuts powder is something which I have been making since Jeremy was a 9 month old. Initially to introduce nuts, I used to powder each nut separately (one day each) and mix with every food. As he grew older I realized he hates whole nuts especially Almonds and Pistachios. Cashews are still ok with him provided they are salted ones. But still he wasn't consuming much. Thats when I decided to continue making the essential and important nut powder.
