Tahiri or Tehri is a one pot dish which is similar to a pulao. A popular Awadhi recipe from Uttar Pradesh, its somewhere between a veg pulao and veg biriyani. Usually a Vegetarian Tahiri uses potatoes, cauliflower and peas, but there are many ways people make it and you can add other veggies as well. I had seen this one many years ago on a TV show and attempted it. Since then it's one of our favorites.
Here I usually make only with potatoes and cauliflower. Sometimes I do add Peas but not always. This time its just Aloo Gobi Tahiri or Tehri. It is very similar to making a veg pulao as mentioned but not all masala's go in this one. Its tasty and easy as well. Let's see how it's done. Ingredients: Serves 4
- Rice 2 cups
- Potatoes cubed 1 medium
- Cauliflower separated into florets 1cup
- Oil 2 tablespoons
- Cumin seeds 1 teaspoon
- 3 slit green chillies
- Onion, chopped 1 medium
- Green peas shelled 1/2 cup (optional)
- Turmeric powder 1 teaspoon
- Chilli Powder 1/2 tsp
- Garam masala powder 1 teaspoon
- Salt to taste
- Ghee 1 tsp (optional)
- Wash and soak rice for 15 to 20 minutes.
- Heat oil in vessel, add cumin seeds and let it splutter
- Add in the chopped onions along with slit green chillies & saute for 5 mins
- When they change colour, add potato, cauliflower and green peas (if using) and sauté on medium heat for two minutes.
- Add the soaked rice, turmeric powder, garam masala powder and salt. Mix all well
- Add 4 cups of hot water and bring to a boil. (see notes)
- Cover and cook on low heat for fifteen to twenty minutes or till rice is done.
- Add 1 tsp ghee on top (optional) & garnish with chopped coriander.
- Serve hot with Achari Raita or any raita of your choice and pappad.
Notes:
- Usually whole garam masala's are used in this, but at home we prefer Garam Masala powder instead. So feel free to use as a whole or powder. If using whole masala, make sure to add along with cumin seeds and let them splutter and fragrant. You can add Bay leaf 1 , Cinnamon 1 inch sticks, Black cardamom 1, Cloves 4-5
- Water ratio is always Rice: water (1:2). So if you use 1 cup rice, use the same cup to measure double water for cooking. So for 1 cup rice, you add 2 cups of hot water.
- Feel free to use other veggies, but I feel it then almost tastes like a veg pulao. Cauliflower, potato and peas are the perfect combo.
