Brinjal Gothsu (Curry with Brinjal)

Ghee Rice

Ghee rice is made from basmati rice cooked with mild spices and ghee. It is one pot rice dish and one of the most basic flavored rice recipe which can used for biriyani's or even have it with chicken curry or vegetable kurma. I use this mainly for my biriyani. Its quick and easy to make. Lets see how its done. Step by step given below for referenc Ingredients:  Onion- 1( finely sliced ) Ghee- 2-3 Tbsp Basmati rice- 3 cups (Washed and soaked for 30 mins) pepper, cardamom, bay leaves ,cinnamon, fennel Salt- as per taste Boiled water-6 cups(same cup used to measure rice) Method: Heat the cooking vessel, add the ghee and let it become little hot. Later add all the whole spices and onion. Let this cook for a while and then add washed/soaked rice.  Sauté rice in this ghee mixture for 5-8 minutes until the rice dry and starts crackling. These Love letters are one of the fondest childhood memories I have. Our mom used to make these quite often for me and my sister. We, specially my sister were always hungry 😁 and my mom would have to always find simple, easy, quick recipes to satisfy us.  This was one of those recipes. We used to love having them. And now I have a son who is always hungry and these simple delicious recipes come handy and I treat him.  It is a popular Kerala snack, made with maida and egg, or alternatively wheat flour, filled with sweet filling, and its good to go. These are nice and filling too.  Love letters is a traditional tea time snack in kerala with many different names to its credit. Vegetable Rava Upma

This is yet another quick and easy breakfast option for kids and adults alike. Its made of Rava/Sooji/Semolina and can be made plain or either with veggies of your choice to make it more healthy and tasty. You can serve this with coconut chutney or as it is. My kiddo loves o have them with little ghee and banana mashed in to it. Caramel Custard Pudding

Love this one, simply because its just so so easy to make and delicious. I always say, food doesn't need to be complicated to be delicious. It just needs to be easy, simple, quick.  Add little bit of love to it while making and yay you have a wonderful dish to serve. I tried this Caramel Custard Pudding first at my dear friend-soul-sister Rohini chechi. She is a wonderful cook and we relish her food. When I had these I thought it would be so difficult to make. But I was wrong. Its one of the easiest desserts one can make. My sister is the best in this and she makes them like a pro.I recently tried them out and did a fair job. Lets see how its done. VazhaChundu Payarum- Banana Flower Sabji

This one was introduced to me by my mother. I never thought we could make something from the banana flower. She used to make it with just coconut and some shallots mixed with the banana flower. But at my in laws place I got a different versions of this, in which they add the cooked green gram or the vanpayar to it. It does have a distinct flavour and well, like I always say what will go wrong in a dish when there is coconuts. Lets try out this traditional kerala dish. Tomato Drumsticks Curry (Takkali-Muringakka Curry)

Curries or gravy is an integral part of our lunch. My family needs a gravy based curry to pour on rice and relish. We usually have Dal tadka, Moru, Erriserry, Sambhar. This is one curry we make quite often and as most of the South Indian curries, this is a coconut based curry. This was made by my mother as a tomato curry, but I started adding drumsticks for that added flavour and for the love of drumsticks of course. Vegetable Vermicili Upma (Sevai Upma)

This is another quick, easy and healthy breakfast option which has tons of vegetables and is filling too. We love having this once a week and most of the time its brunch for us. Prep your veggies, boil and strain the vermicelli and mix all together and its ready. Lets see hows its done.
