Oats Palak (Spinach) Paratha

A quick and filling breakfast definitely gives you the energy to take you through the whole day easily. Breakfast is the most important meal of the day and we definitely must have a hearty one. This quick and easy Oats Palak paratha is super soft and very good option for kids who fuss about leafy vegetables. Its basic Palak Paratha with addition of oats to make it more filling. We all know the benefits of Oats and how nutritious they are. I add little bit of curd which makes these paratha's super soft. Also you can chop the spinach and add like for normal methi paratha's, but I blanch them and make a paste and add so there is no fuss eating. If you like you can simply add chopped spinach instead. Let's see how it's done.
I  have added step by step image below for easy reference. This quantity yields about 12-15 paratha's. The dough will stay good in fridge for about 1 day.

Ingredients:
  • Instant oats- 1 cup
  • Whole wheat flour- 2 cups
  • Chopped or blanched spinach – 1 ½ cups packed
  • 3 pods garlic (optional)
  • 2 green chillies slit
  • half onion chopped (optional)
  • Cumin seeds or powder - ½ tsp
  • Red chilly powder- ½ tsp
  • Curd/yogurt – 3 tsps
  • A pinch of turmeric
  • Salt to taste
  • Some Whole wheat flour for dusting
  • 3 tsps of Oil to mix in the dough 
  • Oil or ghee to make the paratha’s
  • Water to mix the dough
Method:
  1. Take the oats & add just enough water (about 4 tbsp) to soak them. Mix. Leave it for ten minutes.
  2. While the oats are soaking, blanch the spinach in some water (see notes) 
  3. Once the spinach is little cold strain & add into a mixer grinder jar along with garlic, green chillies, cumin seeds or jeera, chilli powder, turmeric powder, curd/yoghurt and make these into a fine paste. Add little water to make into paste if needed. **
  4. After this add the whole wheat flour to the soaked oats along with spinach puree
  5. Add in the necessary water to make the dough.**
  6. Knead it to make a medium soft dough. 
  7. Let the dough rest for atleast 15 to 30 mins
  8. Divide the dough into equal size portions. Roll out each dough into a medium circle like you would for a roti
  9. Heat a tava or pan, and cook the paratha on both sides. Apply some oil or ghee as per preference. 
  10. Remove and serve it with Pickle and Yogurt.

Notes: 
  • For Blanching the spinach, in some drinking water add in the washed spinach for about 5 to 7 mins until its par cooked. 
  • When you add everything to the oats, mix well before adding water for making the dough. This is because, you might have some water content already from the soaked oats and from the spinach puree. If you add water first it might end up too watery or sticky. 
  • Add water little by little as needed and make into smooth dough
  • Its necessary to rest the dough for atleast 15 mins
  • Use quick cooking or instant oats for this. 
  • If you don't eat garlic, you can avoid that.

Sambar is a must in most south Indian families and like others even I have grown up having dosa- sambhar and chutney's. A Sambar is a lentil based vegetable stew or curry cooked with dal/lentils along with some veggies and some tamarind pulp. There are coconut based sambar as well and each region has its own sambar variation. In my house, we all prefer quick meals, but yet tasty. My mother who was a working lady would make elaborate meals only during holidays or special occasions. Rest all the meals would be quick yet very very tasty. This is one such sambar which my mom has taught me and is super quick.  This doesn't use tamarind like in a traditional sambar and gets its tangy flavour from tomatoes. Home-Made Nuts Powder

Home-Made Nuts powder is something which I have been making since Jeremy was a 9 month old. Initially to introduce nuts, I used to powder each nut separately (one day each) and mix with every food. As he grew older I realized he hates whole nuts especially Almonds and Pistachios. Cashews are still ok with him provided they are salted ones. But still he wasn't consuming much.
